Creamy Herb Mayo

Add a tasty zip to any sandwich with this Creamy Herb Mayo.

1/2 cup mayonnaise
1 Tbsp dill weed
1 tsp grated lemon zest

Mix all ingredients thoroughly, use as a condiment for subs, sandwiches and wraps.

Apple Glaze

1 lb Confectioners Sugar
1/4 Cup Apple Cider

Combine until smooth, drizzle over spice cake or muffins.

Special Occasion Carrot Cake

1 Box Carrot Cake Mix
1/2 Cup Water
1/2 Cup Vegetable Oil
4 Eggs
8oz can crushed pineapple, undrained
1/2 Cup Chopped Walnuts
1/2 Cup Shredded Coconut

Heat oven to 350F, grease and flour a 13x9" rectangle or 2 8" round pans. Mix cake mix, water, oil, eggs and pineapple on low speed for 30 seconds. Then on medium for 2 minutes. Stir in nuts and coconut. Pour into pans.

Bake 37-43 minutes or until toothpick comes out clean. Cool completely, about 1 hour. Frost with cream cheese icing or apple glaze.

My mother replaced our family favorite chocolate cake recipe with this one.

Frost your cake with a thick layer of buttercream icing or make fresh
whipped cream and sprinkle with cocoa powder. Enjoy!
